Instructions

  1. Wash the chicken breast fillets, pat dry and cut into pieces. Peel and dice the vegetable onion (butcher`s onion). Clean, wash and dice the peppers. Heat the olive oil in a high pan and fry the pieces of meat in it. Add onion and pepper cubes and fry. Add the rice and raisins and pour the chicken or vegetable stock over them. Season with saffron, some ginger powder or some fresh, finely chopped ginger, salt, pepper and some ground cumin. Simmer over low heat for about 20-30 minutes until the rice is soft. Check towards the end whether a little more stock needs to be refilled. At the end of the cooking time, however, all of the liquid should be absorbed by the rice.
