Instructions

  1. This delicacy is probably our No. 1 favorite dish since we were allowed to taste it for the first time in a Turkish restaurant - unfortunately we don`t know the original name anymore. It is quick to prepare and simply tastes fantastic. We hope that you can enjoy this culinary delight as much as we do.
  2. First, the spinach needs to be pre-brewed a little. Simply steam the appropriate amount of spinach leaves in a saucepan with a little water for about 10 minutes.
  3. In the meantime, peel the onion and cut into small, very fine pieces. Then the feta cheese can be prepared. Simply take small pieces of it in your hand and crumble. Store on a separate plate or bowl.
  4. Drain the spinach (colander) and, as soon as it has cooled down a little, wring it out very hard. At the same time, the fine onion pieces can be fried in a pan with a little butter or oil. As soon as the onions are slightly translucent, add the spinach. If possible, pluck the wrung spinach into the pan (it should lie loosely in the pan and not as a squeezed lump!).
  5. While the spinach leaves are being fried in the pan for about 5 minutes (stir regularly and distribute the onions well under the spinach), the eggs can already be stirred. Beat the eggs in the classic way with a fork, as you would for a scrambled egg in a cup or something similar. Add nutmeg, pepper, paprika powder and a little oregano - this will make it nice and spicy. Add a dash of carbonated mineral water (this will lengthen and loosen the egg). Put the mixed and seasoned eggs in the pan over the spinach and let everything top up (be careful - it can burn quickly now!).
  6. As soon as the egg is firm, divide the spinach morsel in the middle and arrange one on each plate. Now sprinkle the crumbled sheep cheese over each bite and then sprinkle plenty of oregano over it. Serve immediately.
  7. Fresh, warm flatbread or, alternatively, a few slices of toast tastes best with it.
  8. Even if it might not look like much - this meal is not only healthy and very tasty but also very filling.
