Clean and wash the leek, halve if necessary and cut into pieces approx. 3 cm in size. Clean and wash the peppers and cut into small pieces. Heat the fat in a pan. Add paprika and leek and sauté for about 5-10 minutes (add a little mineral water if necessary).
Dice the sheep`s cheese. Whisk eggs and milk with the whisk. Season well with salt, pepper and paprika. Add the olives and cheese to the vegetables. Pour the egg milk over it and cover everything and let it set over low heat for about 10 minutes.
It goes well with flat bread or rice and a glass of red country wine!
