Instructions

  1. The Russian turtle cake consists of biscuits layered with buttercream and covered with a chocolate icing. In terms of taste, it is somewhat reminiscent of Lukullus / Kalte Schnauze, but it looks a lot more.
  2. For the cookies:
  3. Mix the sugar, flour, eggs, baking powder and salt well with the mixer. Use a teaspoon to place blobs about 5 cm in diameter on a baking sheet with baking paper. When baking, these will rise up to 8 cm. Bake at 180 ° C in a preheated oven for about 10 minutes until they are golden brown.
  4. Makes a total of about 3 sheets.
  5. For the cream:
  6. Mix the sour cream, sugar and softened butter (take out of the fridge 3-4 hours beforehand) to a creamy mass.
  7. For the glaze:
  8. Bring the sour cream, butter, sugar, cocoa and dark chocolate to the boil in a saucepan while stirring and allow to cool down a little.
  9. Arrange a layer of cookies on a round plate. Then spread the buttercream on the underside of the other biscuits and place them on top of the arranged biscuits. This creates a mountain that looks like a turtle shell. In between, the layers can be covered with chocolate glaze. Then pour the remaining glaze over the entire mountain of biscuits so that it is completely covered.
  10. Let the cake sit in a cool place - but preferably not in the refrigerator - overnight.
