Instructions

  1. Drain the peaches, collecting the juice. Cut the peaches into very small pieces.
  2. Wash the lemon balm, pat dry and pick off the leaves. Finely chop with a tablespoon of sugar in a blender, then add half of the quark and mix again. Add a good shot of the peach juice, the cream should have the consistency of yogurt. Puree again until the cream is nice and green, then set aside.
  3. Mix the remaining quark with a tablespoon of sugar, a teaspoon of vanilla sugar (or vanilla pulp) and a little peach juice until smooth and creamy.
  4. Now put 4-5 tablespoons of peaches in large latte macchiato glasses, one tablespoon each of the light curd cream, then spread the entire green curd cream on top. Then break the ladyfingers into small pieces (break through the Amarettini once) and spread on the green cream. Put the white cream on top again and the rest of the peaches on top. Decorate with a few lemon balm leaves!
