Sweat the finely chopped shallot in butter. Dust with flour, pour on the soup, bring to the boil and cook for about 5 minutes. Add the whipped cream and gray cheese and cook for another 10 minutes until the gray cheese has melted. Mix the soup well and season with salt, pepper and caraway seeds.
Roast thin black bread slices.
Garnish the delicious Tyrolean Graukassuppe in soup plates with the toasted brown bread and fresh parsley and serve hot.
