Mix the low-fat quark and yogurt together until smooth. Peel the garlic cloves and chop them into small pieces. Cut the cucumber (s) into small pieces (or slice. But I like it when I have something to bite).
Add the garlic and cucumber to the quark-yoghurt mixture. Season well with the spices and let it steep overnight in a bowl with a lid. Season to taste again the next day, seasoning again if necessary.
If you like, you can also fold in herbs such as parsley or chives.
Tastes great with gyros, as a dip for potatoes and vegetables, and as a salad dressing.
