Slightly moist, crumbly buns with a golden, appetizing crust are definitely worth the time and effort! Bright pink buns made from beetroot yeast dough are great for sandwiches, served with butter and cheese, or as bread with a main course. Beets are not felt at all!
Sift the flour (you may need up to 2 glasses of flour with a capacity of 250 ml). Melt the butter.
We wash the beets and boil or bake until tender. The approximate boiling time for beets in water is 40-50 minutes. You can save time and bake beets in the microwave. To do this, put the beets in a dish suitable for a microwave oven, cover with a lid and put in the microwave for about 10 minutes at a power of 450-500 watts. After 7 minutes, check with a toothpick. If the beets are not ready, then return them to the microwave for another 2-3 minutes. Leave the beets in the off microwave for about 5 minutes. Cool the beets.
Add sugar and yeast to warm water, mix.
We put the yeast mixture in a warm place for about 10 minutes, until the characteristic foam appears.
Pour about 2/3 of the prepared amount of flour into a deep bowl, add salt, pour in the yeast mixture and melted and cooled butter.
Peel and mash the beets with a blender. Add the beetroot puree to the dough.
Sprinkle the working surface with flour. We spread the dough on it and knead well. Add more flour if necessary. The dough should be soft and easy to handle. Gather the dough into a ball, put it in a bowl, cover it with a towel and put it in a warm place for 30-40 minutes.
The dough rose and doubled in volume.
Cover the baking sheet with parchment paper. After rising, divide the dough into 6 equal parts, form koloboks and put on a baking sheet. We put the baking sheet in a warm place for 20 minutes. Meanwhile, preheat the oven to 200 degrees.
Lubricate the buns with yolk.
Sprinkle with sesame seeds and coarse salt on top. We bake buns with beets for 15-18 minutes. We check the readiness with a toothpick.
Unsweetened beetroot buns are ready.
