Wash and peel the potatoes. If you have new potatoes, you can leave the skin on. Halve or quarter the potatoes depending on their size.
Heat a large pan with oil and sear the potatoes over high heat for 8 minutes. Then deglaze with the vegetable stock and cook with the lid closed for 15 minutes over medium heat.
Open the lid, season the potatoes and fry for another 2-3 minutes. If you want, you can add a few onions after the 15 minutes.
