Instructions

  1. Halve and core the melon, cut the flesh from the skin and dice. Rub the peel of the lemon and squeeze the fruit. Scrape the pulp from the vanilla pod. Mix the melon cubes, vanilla pulp (or vanilla sugar), half of the lemon zest, 2 tablespoons lemon juice and the honey. Mix the quark with 1 tablespoon honey, 1 tablespoon lemon juice and the remaining lemon zest. Serve the melon salad with the quark.
  2. Serve with biscuits if you like.

  4. For the homemade vanilla sugar, put 400 g of sugar and the pulp of 2 scraped vanilla pods in a glass with a screw cap, together with the scraped out vanilla pods. Close tightly and let steep for 4 days until the aroma has spread. Has a long shelf life if well closed. The sugar may get a bit hard, then just shake the glass.
