Cut the mango pulp into small squares. Finely grate the fresh ginger (amount to taste). Squeeze the limes and pour the juice into a small saucepan. Add the ginger and about a third to half of the mango quarters and let them warm up. When the mango pieces are warm (softer), puree with a stick, pepper to taste. Then add a little lemon balm and stir. Portion the vanilla ice cream into small bowls, first distribute the warm pulp and then the remaining mango quarters on top.
Tastes wonderful and is a nice mix between sweet and hot (depends of course on the amount of ginger).
