Instructions

  1. Preheat the oven to 175 ° C circulating air, level 3-4 on the gas stove.
  2. Mix the butter, sugar, vanilla sugar and eggs with the mixer until frothy. Mix the flour and baking powder, then stir into the foam mixture until the ingredients have combined well.
  3. Add lemon juice, salt and rum and stir in. Peel the apples, cut into small pieces and fold into the batter. The dough is good if it falls from the spoon with difficulty.
  4. Grease the pan cake pan (Gugelhupf pan) well, then sprinkle with the ground hazelnuts. This ensures that the cake comes out of the mold well after baking.
  5. Pour the dough halfway into the pan. Mix the rest of the batter with the cocoa and then pour it into the mold. Put a fork in the pan and mix the dark and light dough gently. Smooth it out and put it in the oven for 50-60 minutes. In any case, do the chopsticks test, depending on the height of the pan, the baking time may vary!
  6. Variant 1: Instead of making a marble cake out of it, you can also mix the cocoa into the entire dough.
  7. Option 2: Instead of the apples, you can also take a glass of cherries (without the juice, of course) and replace the cocoa with chocolate sprinkles (of course you can also use any other fruit, but I`ve only baked apple or cherry pies so far).
  8. Option 3: Take 50 g less sugar, but add 100 g very finely chopped marzipan.
  9. Other variations: I baked the cake at Christmas time with cherries and cinnamon (instead of salt and lemon) and a dash of red wine (instead of rum), which I will definitely do again!
