Instructions

  1. Peel, quarter, core and slice the apples. Steam in 75 ml of water for about five minutes and then drain. If you like cinnamon, you can add 1 heaped teaspoon of cinnamon and mix with the apples.
  2. For the dough, mix the soy flour with the water (or another egg alternative with the appropriate amount of water) and the 120 g sugar until a homogeneous mass is formed. Then add oil and 160 ml of vegetable milk and mix well. Add the flour, baking powder and the ground almonds and stir until a smooth batter is formed.
  3. Grease a springform pan (28 cm diameter) and pour half of the dough into the pan. Then spread the apples on top and cover with the second half of the dough.
  4. For the topping, briefly bring the margarine, sugar and 4 tablespoons of vegetable milk to the boil and pour the flaked almonds over it. Then spread on the dough and bake for 60 minutes at 155 ° C fan oven.
  5. If you feel like it, you can garnish the cake with powdered sugar and mint.
