- Cut stale rolls into cubes.
- Add 1 tablespoon of olive oil, soy milk, soy flour, nutmeg and salt and leave to soak for 5 minutes.
- Steam the onion with the parsley and 1 tablespoon of olive oil and add to the mixture and knead well, then let stand for 20 minutes.
- Bring the salted water to the boil, in the meantime shape the dumplings from the mixture, preferably with wet hands.
- Put the dumplings in the boiling water and let it steep for about 15 minutes over a low heat, the water must not boil anymore.
