A huge passion for Latin American cuisine has sparked in me to cook a delicious vegan burrito with pancake! The recipe is simple and at the same time vegetarian. In the role of a soft tortilla, we have a pancake cooked in water, and in the role of a vegan filling, we have tofu with spices and arugula.
Cooking the filling. In a preheated frying pan, crumbling tofu with your hands, add spices and fry for 3 minutes.
Let’s start the burrito. Spread toasted tofu and washed arugula on a pancake. You can also add vegetables such as tomato, cucumber, or pepper.
