Mix the omelette ingredients from the chickpea flour to the water in a bowl and let rest for 10 minutes.
Heat enough oil in 2 medium-sized pans. Spread the omelette batter in one pan and fry for 5 minutes on each side.
Put the fried vegetables in the other pan, fry them as well and season with salt, pepper and spices to taste.
Slide the omelette onto a plate, arrange the roasted vegetables on top and fold the top half over.
Tip: Chickpea batter is difficult to turn and tends to break easily. You can make it easier for yourself by searing the omelette over medium heat with the lid closed for 3 minutes, until the batter starts to thicken. Then add the fried vegetables and fry the omelette for another 5 minutes. Slide it onto a plate and then fold it over.
