Peel and chop the garlic. Drain the chickpeas and mash them together with 60 ml of olive oil, but do not mash them (e.g. with a potato masher). Then add the remaining ingredients and knead everything well until fibers form (about 3 minutes).
Divide the dough into 8 equal pieces and form 8 schnitzels. This works best if you first preform balls in your hand, press them flat on a board and then carefully straighten them.
For frying, heat the oil in a pan on medium heat and brown the schnitzel on both sides.
