Heat some vegetable oil in a large pan. Dice the onions, smoked tofu and chillies and add to the pan. Fry for about 10 minutes.
Drain the corn and kidney beans and add. Likewise, the peeled tomatoes (complete with juice) and mash them in the pan. For consistency and taste, add about 250 ml of vegetable stock and cook for another 10 minutes, stirring occasionally. Season to taste with salt, pepper, oregano and caraway seeds.
Prepared quickly and inexpensively and makes you feel full!
