Mix the flour, hazelnuts, sugar, vanilla sugar and spices, add the margarine in pieces and knead the dough by hand (cold hands are helpful here) or with hooks until everything sticks together nicely and you can form a ball. If the dough is no longer cold, it can now be put in the refrigerator.
Cut small pieces from the ball of dough, roll them between the palms of the hands and press them flat on a baking sheet lined with baking paper.
Bake with convection at approx. 150 degrees, top and bottom heat 170 ° until they are very lightly brown at the edge. Otherwise they are too hard.
Let the cookies soak for a day, then they`ll soften a little. (It is best to have a biscuit tin with fruit in it, as you do with cookies.)
