So that the paleo coffee actually tastes like a cappuccino, I foam and warm the milk beforehand. In my opinion, almond milk goes best with the tart coffee taste of all milk substitutes. In addition, the unsweetened version of the almond milk is paleo-compliant.
Then I fill half a glass with the unsweetened, frothed almond milk and stir in a teaspoon of date syrup. Date syrup is also paleo-compliant and, unlike stevia, has no licorice-like taste and its oriental sweetness goes well with the taste of almond milk and coffee.
If you like, you can enhance the oriental taste by adding cinnamon, vanilla or cardamom. But tastes very good and balanced even without spices! Try it yourself!
