Instructions

  1. This recipe is actually designed as the vegan ham of the Vitello Tonnato. The seitan ham also cuts a fine figure separately. A recipe for the vegan cream for Vitello can be found in my recipes as a cream for vegan Vitello Tonnato.
  2. For the preparation of the ham, the moist ingredients and the spices are processed into a homogeneous puree in a high-performance mixer. (Depending on the mixer, beetroot and onions are chopped up a little beforehand.)
  3. The puree is placed in a bowl. Gluten flour and guar gum are mixed well separately. Then the flour mixture is added to the puree, mixed and kneaded well with your hands to form a pink dough.
  4. There are two options for cooking the dough:
  5. 1) The dough is filled into tumbler glasses and screwed on. There should be as little air as possible in the glasses. These are cooked for about 90 minutes in a large pot with water and a lid. The water should only boil just about and should not bubble wildly for a long time. After the jars have cooled down, a vacuum is created and the contents can be kept for several weeks.
  6. 2) The dough is shaped like a loaf and wrapped in a cotton cloth (see the step-by-step instructions for Seitan roast with lentils in my recipes). This is steamed for approx. 90 minutes. Immediately afterwards it is unwound and cools down at room temperature.
  7. After the ham has cooled down, it is cut into thin slices and can be served either separately or as a vitello tonnato.
