Mix the margarine with the vanilla sugar and sugar until creamy. Mix the other dry dough ingredients in another bowl and knead together with the soy milk with the margarine-sugar mixture until a smooth dough is formed. If the batter is crumbly, add a little more soy milk.
Make a mixture of cinnamon and sugar in a shallow bowl.
Divide the dough pieces and shape them into balls. Roll the balls in the sugar-cinnamon mixture and press them flat on a baking sheet lined with baking paper, either with a fork or simply by hand.
