Mix the flour, sugar, vanilla sugar and baking powder together in a bowl. Then add the coconut oil and the plant-based milk or the soda and mix with a whisk. At the end stir in the psyllium husks and the extra ingredients such as coconut flakes etc. and then leave to rest for about 10-15 minutes.
Preheat and grease the waffle iron and gradually bake the waffles. It is best to place them on a wire rack or something similar instead of on a plate. Serve with powdered sugar or ice cream or fruit.
The recipe makes 4 waffles.
Tip: Instead of the psyllium husks, you can also add 1 tablespoon apple sauce or 1/4 mashed banana to the batter.
