Instructions

  1. Cook the rice in lightly salted water according to the instructions. Meanwhile, cook the soy granules in vegetable stock according to the instructions, then squeeze out well.
  2. In the meantime, cut the peppers and zucchini into bite-sized pieces.
  3. Fry the granules with a little oil and add the peppers and zucchini after 2 - 3 minutes and fry with them. After another 2 minutes add the tomato paste and sweat with it. Deglaze everything with the vegetable stock. Now add the tomatoes, simmer until it has the desired firmness.
  4. Finally add the rice and season everything with salt and pepper. I like to add some oregano or thyme to it.
  5. Serve on a plate and enjoy.
