Instructions

  1. Heat the oil in a large saucepan, sauté the onion, bell pepper, garlic and potato for 2-3 minutes while stirring. Add the flour and sweat for 30 seconds. Stir in milk and broth and let the liquid thicken. Add the broccoli and corn and bring the mixture to a boil. Reduce the heat, simmer for about 20 minutes. Stir in 50 g cheese and melt. Season with salt and pepper and garnish the chowder with the rest of the cheese and coriander.
  2. Tip: Cream makes the chowder even creamier (but unfortunately also contains more calories). Possibly add tofu.
