Clean the carrots and zucchini and cut into noodle-like strips with the spiral cutter (or a vegetable peeler). Remove the peel from the garlic cloves and dice finely. Grate the parmesan.
Heat the oil in a pan and fry the vegetable noodles for about 5 minutes. Then reduce the heat and add the garlic and sweat. The garlic shouldn`t take color, otherwise it will turn bitter. Salt and pepper the pasta towards the end of the roasting time.
Arrange the vegetable noodles on plates and garnish with good olive oil and the parmesan.
If you leave out the parmesan, the recipe is vegan.
