Peel the vegetable onion and cut into very thin slices with a vegetable slicer. Peel the cucumber and also finely slice it. Wash, dry and thinly slice tomatoes. Put everything in a bowl and mix together. Finely chop the chives and parsley and add to the vegetables.
Squeeze out the lemon juice. Peel the garlic. Mix the juice of the lemon, vinegar, oil, garlic, pepper and salt into a dressing in a bowl. Pour over the vegetables and mix everything well. Let it steep for a moment and enjoy.
A very good side salad with pasta, rice or other vegetarian or vegan dishes.
