Cook the pasta until al dente according to the instructions on the packet. Wash, clean and dice the vegetables (the carrots smaller than the zucchini).
Heat the olive oil in a saucepan and fry the carrots in it for about 6-7 minutes. Then add the zucchini cubes and fry for about 4-5 minutes. When the vegetables are ready, add the tomatoes and season with salt, pepper, sugar, basil and oregano.
Preheat the oven to 200 °.
Grease a baking dish with butter and pour in 1/3 of the sauce, then add the pasta and the rest of the sauce. Sprinkle with parmesan, put the mozzarella on top and grill in the oven until the cheese has melted.
