Wash the broccoli and cut into florets. Cut the leek lengthways, cut into small slices and wash thoroughly. Clean the kohlrabi and cut into strips. Clean the carrots and cut into fine slices.
Put the chopped vegetables, beans and asparagus in a large saucepan, fill with water and add vegetable stock (amount to taste). Cook everything until soft.
Warm the Maultaschen for about 15 minutes over low heat. Finally, wash and chop the parsley and add to the soup.
