Instructions

  1. For the green spelled dumplings, mix the lukewarm butter and eggs well, then stir in the cream. Add the spices and parmesan and finally stir in the green spelled flour. Let the firm dough rest at room temperature for about 20 minutes.
  2. Bring the vegetable stock to the boil in a large saucepan and cut off small dumplings with a teaspoon dipped in cold water, shape in the moistened palm and add to the simmering vegetable stock.
  3. Let it steep gently in the broth for about 5 minutes. Then add the vegetables and cook for another 10-15 minutes until the vegetables are firm to the bite. Serve with finely chopped chives and parsley.
  4. As an addition to a tomato soup, the green spelled dumplings make a filling meal.
