Sweat the onion and garlic in olive oil, sauté the vegetables and add the vegetable stock. Season with salt, pepper and paprika and add the rosemary.
Simmer for about 5 minutes and then add the zucchini cubes and the noodles to the soup. Let simmer until the noodles are cooked through. Add the tomatoes and the chopped parsley and season with vinegar, salt and pepper.
