Peel the onion and cut into small cubes. Wash the potatoes and vegetables, peel if necessary, and cut into fine strips or pieces.
Heat the fat in a saucepan. First add the onion cubes, then the vegetable pieces and stir vigorously. When everything is really hot and a little toasted, add the quinoa to the pot. Stir and add the warm water. Season with vegetable stock, salt, pepper, basil and thyme. Let simmer for 15 to 20 minutes, stirring occasionally. Finally, pour in the milk (you can also use cream!) And briefly bring to the boil.
Note: If you like, you can also make one with meat from this vegetarian dish and add pieces of meat sausage or scalded sausage.
