Clean and roughly cut the soup greens. Cut the cauliflower into florets. Peel and cut the onion into eighths.
Put the thick rib together with the soup greens and the onion (it`s best to use it) in a pressure cooker and add the water. Cook in the pressure cooker for 30 minutes. Remove the meat and vegetables from the broth.
Now loosen the meat from the bone and cut into bite-sized pieces. Bring the broth to the boil, add the cauliflower, mixed vegetables and the meat to the broth, then simmer for about 20 minutes.
In the meantime, mix the flour, butter and egg into a smooth dough and season with nutmeg, pepper and salt. Cut off dumplings and simmer briefly (approx. 10 minutes) in the soup. Serve the soup with parsley.
