Instructions

  1. Cut the bacon into strips and roughly dice the onions. Cut the vegetables (e.g. carrots, celery, cauliflower, broccoli, snow peas, green beans) and the Cabanossi into bite-sized pieces. Peel the potatoes and cut into cubes. Prepare the vegetable stock.
  2. Fry the bacon and onions in a little olive oil. As soon as the toasted aromas develop, add the garlic cloves and thyme and let simmer briefly. Add the stock, bring to the boil, then simmer gently for 15-20 minutes (the bacon will then be nice and tender).
  3. Add the potato cubes, bring to the boil, then add the vegetables and let simmer again. Finally add the Cabanossi and season with pepper. The broth, the bacon and the Cabanossi mean that little or no salt is required.
