The proposed vegetable dish can be adopted by vegetarians. A vegetable stew with eggplant and new potatoes is being prepared in a pan. The recipe is simple, so even a novice hostess can handle it.
We put a frying pan on the stove and pour a little vegetable oil into it. The fire is minimal. The first ingredient we put in the pan is young zucchini. Pre-cut it into semicircles.
Layout the next layer of carrots, which should also be chopped in the form of half rings.
Let’s start slicing the eggplant. First, we cut the vegetable across into 4 parts, then chop it along. We transport the eggplant parts to the pan.
Cut the young peeled potatoes into slices. We spread it on a layer of eggplant.
Of the vegetables, only onions remained. It can be shredded arbitrarily.
Fill the vegetable platter with boiled water.
Season with salt and seasoning. We add heat to moderate, cover the pan with a lid, simmer without stirring for 35 minutes.
