Put the prepared vegetables (e.g. carrots, zucchini, kohlrabi, leek) in a bowl and sprinkle with a teaspoon of salt, mix and knead well. Let stand for 30 minutes, then put in a sieve, drain and squeeze out well.
Finely mash the tofu with your fingers or a fork in a bowl, add the vegetables and the remaining ingredients, season with pepper, cayenne pepper, grated lemon zest if you like and possibly a little salt and knead the mixture vigorously with your hands.
Shape 12 patties, squeeze them together again and fry them in a pan with oil on the heat that is not too hot for about 10-12 minutes. Don`t turn too early.
