Cut the peeled carrots into slices, the paprika into strips, and the spring onions into rings. Cook the pasta in salted water according to the instructions on the packet.
Fry the carrots, pasta, peppers, spring onions and bamboo shoots in the oil until the vegetables are firm to the bite or until the desired firmness is achieved. Add the soy sauce, chilli sauce, soaked mushrooms and the chopped cashew nuts and mix well. Garnish with fried onions if necessary.
