Instructions

  1. Thaw the spinach in a sieve for approx. 1 - 2 hours. If you have to go faster, pour cold water over the sieve until it is completely thawed.
  2. Mix the flour, salt and olive oil in a bowl. Crumble the yeast, dissolve it in lukewarm water and mix it with the flour. Knead everything vigorously with your hands. Cover the yeast dough in the bowl and let it rise for about 1 hour until it has doubled in volume.
  3. In the meantime, drain the tomatoes a little and dice them. Cut the peppers into slices. Squeeze the thawed spinach well. Wash the parsley and shake dry, pluck the leaves and chop finely.
  4. Finely dice the mozzarella and mix with the ricotta and egg in a bowl. Stir in the spinach, tomatoes, peppers, parsley and parmesan. Peel and squeeze the garlic. Season the whole thing with salt, pepper and paprika powder.
  5. Preheat the oven to 220 ° C (top / bottom heat, convection: 200 ° C). Brush a tray lightly with oil. Halve the dough, roll one half out on a little flour and place on the baking tray. Spread half of the filling over half of the dough, leaving one edge free. Then fold the other half over it and press it firmly on the edge.
  6. Brush the calzone with olive oil. Repeat the process with the rest of the batter and filling. If you like, you can sprinkle some grated cheese over it. Bake in the middle of the oven for about 25 minutes until the calzone is nice and brown. Take out of the oven and let rest for 5 - 10 minutes. It is best to serve a small salad with it.
  7. Tip: Vegetarians should make sure that hard cheese does not contain any animal rennet. If you like, you can also use more of the tomatoes and peppers.
  8. 1/2 packet of dry yeast can be used instead of the fresh yeast. Then, unless otherwise stated, it does not have to be mixed with water, but simply stirred into the dough. Then simply knead the water with the remaining ingredients to make the dough.
  9. Instead of fresh parsley, you can of course also use 1/2 packet of frozen parsley.
