Instructions

  1. This is my absolute favorite salad and everyone who has tried it immediately wanted the recipe. So I don`t want to withhold this delicious, but very simple salad from you.
  2. Chop the cucumber, tomatoes, peppers and onions and place in a bowl. Drain the chickpeas and add to the vegetables. Finely chop the parsley and add to the vegetables. Pass the garlic through a garlic press or grate finely.
  3. Make a dressing in a bowl of olive oil, vinegar and garlic. Pour over the vegetables and mix. Season to taste with salt and pepper.
  4. Cut the feta or herder cheese into cubes and sprinkle over the salad.
  5. If you like it spicier, you can also add sambal oelek or ajvar to the salad.
  6. Serve as a side dish or main course with a baguette. If you let the salad soak in the fridge for a night, it tastes even better.
