Instructions

  1. Peel the sweet potatoes, carrots and parsley root. Roughly dice the potatoes and carrots and finely dice the parsley root. Clean the leek and cut into rings. Wash the parsley and remove the leaves.
  2. Heat the butter, stew the prepared vegetables for about five minutes and season with salt and pepper. Pour in the stock and stir in the Sambal Oelek and tomato paste. Cook the soup in a closed saucepan over medium heat for approx. 15-20 minutes. Season again to taste and serve sprinkled with parsley.
  3. If you don`t like it that spicy, you should try it with half a teaspoon of Sambal Oelek and season it if necessary.
