- Wash 2 lettuce leaves and pat dry. Cut the herbs into small pieces. Halve the toastie and toast.
- In the meantime, melt the butter in a pan and add the eggs to the pan. Fry on medium heat. Season with salt, pepper and paprika.
- Spread the brunch cheese on the cooled toasty halves. Place the lettuce leaves and the fried eggs on top. Sprinkle with herbs and serve immediately.
- If you want, you can also sprinkle a few fried onions on the eggs.
