  1. Chop the mushrooms and onions and fry them in a pan with a little olive oil. First cut the savoy cabbage into strips and then dice. Also add to the pan. Season the vegetables in the pan with salt and pepper and Ras el Hanout. Roast the spices a little and then add the spinach. Then switch off the hotplate.
  2. For the filling, put 2 whole eggs and 2 egg yolks in a bowl and whisk. Add the vegetable mixture from the pan and fold in well. Mash the pre-cooked potatoes with a fork and add to the bowl with the other ingredients. Also add the starch and mix everything into a homogeneous mass.
  3. Lay out the puff pastry on baking paper and place on a baking sheet. Whisk 1 egg with a little water and brush the puff pastry with the egg mixture. Then distribute the vegetable mixture on the puff pastry. Leave about 6 - 7 cm space on all sides so that you can fold the puff pastry on the sides later.
  4. Cut the feta cheese into thick strips and place in the center of the filling. Then fold the puff pastry over the filling and press down firmly. Brush the short sides with a little egg mixture and roll up. Then coat the entire roll with the egg mixture again.
  5. It is important that the roller does not have any holes. Otherwise it could leak and become dry.
  6. Put the roll in the oven and bake for about 40 minutes at 180 ° C until the puff pastry is crispy brown.
  7. In the meantime, prepare the sauce. To do this, caramelize 2 tablespoons of brown sugar and then deglaze with 100 ml red wine and 50 ml balsamic vinegar.
  8. Let the finished roll rest for 10 minutes and cut into pieces, serve with the warm sauce.
