Sweat the onions in a little oil, add the diced paprika and chili peppers. Now add the mushrooms and let them stew a little. Pour the vegetable stock, add the tomato paste and cream. Reduce the sauce until it`s just the right consistency. Season to taste with pepper and herbs from Provence.
Served with hash browns, it is a complete vegetarian dish. This sauce is also very suitable for schnitzel.
