Instructions

  1. Cook the wholemeal pasta in sufficient salted water according to the instructions on the packet - if you like, take it out of the water a little earlier, then it will by no means be too soft later.
  2. In the meantime, clean or peel the peppers, tomatoes and garlic. Cut into small pieces and place in a saucepan with the spinach. Add a good dash of water, if you like, vegetable broth (then you don`t have to season so much later) and let the whole thing simmer over high heat.
  3. Add the noodles (even if the spinach is still frozen - they will then cook through with the added water). As soon as the pasta is al dente and the spinach has thawed, season as needed (I use the specified spices and herbs, but these can also be varied).
  4. Arrange the whole thing on a plate and serve garnished with a little basil.
