Rassolnik is a Russian dish from ancient times. There are many different recipes with meat, fish, or kidneys. But let’s try to cook a vegetarian rassolnik.
Boil 2.5 liters of water. Add the potatoes and rice. Cook over medium heat for 15 minutes.
Chop the onion.
Grate the carrot on a coarse grater.
Dice the pickled cucumbers.
Grate the tomatoes.
Pour some vegetable oil into a frying pan. Place the prepared onions and carrots in the hot oil. Stew, stirring occasionally, over medium heat for 1-2 minutes.
Add the grated tomatoes. Stew, stirring occasionally, for 3-4 minutes.
Add the cucumbers. Stew all together for 5-7 minutes.
Cut the cabbage into thin strips and put it in the soup.
Add the fried-up vegetables. Salt and pepper.
Simmer the vegetarian rassolnik under the lid gently for 10 minutes.
Wash and finely chop the herbs. Add them to the soup.
