Cook the basmati rice in the vegetable stock until cooked.
Peel and dice the onions and fry them in olive oil in a large pan. Wash the mushrooms, cut them into slices and fry them in the pan for about 3 minutes. Then cut the peppers into sticks and add them to the pan as well. Fry for another 5 minutes. Cut the tomatoes into cubes and add them to the pan.
Before they disintegrate, add the cooked rice to the pan and stir everything well. Season to taste with salt and curry. Finally, cut the feta into small cubes, add it and serve the rice pan immediately, because the cheese should not melt.
