Instructions

  1. Clean the vegetables. Cut the celery into small cubes, chop the celery greens (not the lower hard stalks), thinly slice the carrots and leek, divide the cauliflower into small florets, dice the tomato.
  2. Let the oil get hot in a large saucepan, add the onion cut into large wedges and the squeezed garlic and sauté. Add the vegetables and simmer, season well with salt and pepper. When the vegetables, especially the celery and carrots, are done, season everything again with salt, pepper and Maggi to taste. Chop the parsley.
  3. For the egg prick, whisk the eggs and 75 ml milk and season with salt and nutmeg. Rinse a soup plate with water and cover the bottom with a piece of cling film
  4. Add egg mixture and microwave at 750 W for about 1 - 2 minutes (you have to try it out)
  5. let it stall. Take out and turn over, simply go through the foil, then cut into cubes and add to the soup with the chopped parsley before serving. Of course, you can also stick the egg over the water bath.
  6. I prepare the pasta in a separate saucepan according to the instructions on the packet and also add it to the soup at the end.
  7. Tip: with homemade pancakes, which are spicy and cut into fine strips
