Loosen the meat and cut into pieces approx. 2 cm in size. Clean, peel and cut the vegetables into approx. 1.5 cm thick slices.
Bring the soup to the boil, add the meat and simmer over a mild heat for about 30 minutes. Add the vegetables and simmer the soup for another 30 minutes. Add the soup noodles and cook for 5 minutes. Season the soup pot with salt, pepper and nutmeg. Finely chop the chives.
Scoop the soup into plates and serve sprinkled with chives.
Note: Here in Austria, the yellow beets are yellow in color, if you don`t have that, just take more carrots.
