Instructions

  1. Mix the ingredients for the dressing. Clean the spring onions and cut into fine rings. Cut the snow peas into 1-euro pieces and place in a sieve with the sprouts. Bring the water to the boil and pour it over the vegetables in the sieve. So blanched, it is no longer raw, but neither is it cooked soft. Dip briefly in a bowl with ice water so that the snow peas keep their beautiful color and do not turn gray and drain. Fry the prawns with a little oil in the pan for about 3 minutes. Meanwhile, put the glass noodles in a bowl. Pour boiling water over them so that they are completely covered. Let it steep for about a minute and then drain off the water. Finely chop the coriander. Mix together all the ingredients for the salad. Add the dressing, stir in well and let it steep for about 5 minutes.
