Roughly chop the walnuts. Caramelize the brown sugar and mix with the chopped walnuts. Spread the caramelized nuts on a baking sheet lined with baking paper and allow to cool. Then crumble or roughly chop again.
For the ice cream, whip the milk, egg yolks and honey over steam until creamy. Then beat in cold water again until cold. Fold in the whipped cream and pour into the ice cream maker and let it set. When the ice cream starts to set, stir in the caramelized nuts.
A shot of rum or nut liqueur goes very well with this ice cream.
This ice cream can also be prepared as a parfait. Prepare the mixture as mentioned above, fold in the nuts and fill in molds or a loaf pan lined with cling film and freeze for at least 4 hours. An orange sauce goes very well with it.
